Description
Guillaume grows his "La Belle Inconnue" oysters to the rhythm of the tides. Each oyster tells its own story: meticulous expertise, oyster beds in harmony with nature and the demand for consistent quality. There's a little bit of him in each one, a beautiful unknown just waiting to be discovered. In these same claires, Guillaume also raises prawns, which play an essential role in the natural balance of the area. Behind his discretion, his eyes light up as soon as he talks about his job. With each tasting, he shares a little of his passion.

The mornings are spent at sea, so don't hesitate to contact Guillaume or come to the shack in the afternoons. But beware, the tides are the only ones who decide the schedule.
Guillaume regularly attends local wine-tasting events, notably in summer at La Paloma bar in La Faute-sur-Mer or the Cave du Phare in La Tranche-sur-Mer.
